Legacy of Biryani
Biryani, is a set of rice-based foods made with spices, basmati rice and meat, fish, eggs or vegetables. The name is derived from the Farsi word ‘birian’ which means “fried” or “roasted”. Biryani was originated in Iran (Persia) and it was brought to South Asia by Iranian travelers and merchants.

The most popular of all Biryanis is Hyderabadi Dum Biryani. Dum means steam and dum pukht means to choke off the steam. The food is placed in a pot made of clay, and a dough is used to create a tight seal to prevent steam from escaping. The food is cooked slowly in its own juices and steam, allowing herbs and spices to fully infuse the meat or rice, preserving the nutritional elements.While the key ingredients remain the same, many regions have developed their own ways of cooking and serving Biryani. Like in Hyderabadi Biryani, both the marinated meat and the rice are cooked together. While in Lucknowi Biryani, the rice and meat are cooked separately and then layered.
The essential requirement for a good Biryani is to use good quality fragrant long grained basmati rice. For a non-vegetarian biryani, the main ingredient that accompanies the spices is the meat—beef, chicken, goat, lamb, fish or prawns. A biryani is also accompanied with Dahi Chutney, or Raitha.
